The clinic adjacent to my workplace is undergoing renovation. A second story is being added. There will be more medical consulting rooms, as well as extra-clinical rooms such as classrooms to teach women skills such as sewing. They are also hoping to add a small store to sell items.
I decided to dip into reserve funds (actually part of the food budget for later in the year) to buy a few tables. We need tables, as it's getting impossible to assist with homework or reading without tables. Other than these two tables, all we have are two oval tables for use with the kindergarten children. These tables are easily stored so we can utilize our small space as best we can when we don't need them. For $50 dollars I can buy another table. We need four more as soon as we can scrounge up a few dollars to buy them.
This is my buddy, Anthony. Please, if you visit, NEVER call him Antonio as he prefers the English version of his name. He might very well stomp on you if you use the wrong version of his name. I failed to get a picture this week that shows the Anthony that I know and love. He was making a Valentine's Day card for his mom a few days ago, when he suddenly stood up, hugged me hard enough to take my breath away, and whispered, "I wish you were my mom." Anthony lives with an aunt as his mom works and lives somewhere else. His aunt is not known for her tender parenting skills. She also doesn't have the means to feed Anthony everyday, either.
Boys like Anthony need to eat in order to grow and for their minds to develop normally. I hate to turn them away, but lately we have cut back on the days we serve as do not have enough funds. I have been short-tempered lately as I feel overwhelmed by the challenges.

I am fairly sure that Anthony would stomp you if you tried to call him Tony. He an impulsive 13 year old who likes to throw punches or give hugs, depending on the moment. Those aren't plantanos, or plantians, as some call them. Those are green bananas. They are delicious in soup, especially beef soup. It mellows the gravy with a slight sweet taste because green bananas are not very sweet.
Those are not plantains. Those are normal, everyday bananas. When green, they are starchy and cook like a potato but slightly sweet like a sweet potato. If you get this comment, shoot one back, as disqus has not been behaving lately. I need to know if replies are being received.

Also, I don't remember what they are called - - - but are those little dark green pear shaped vegies a type of squash? If so, they were fed to us in Haiti nearly every day and I liked them, especially with La Vache qui Rit cheese melted on them.
I do not know what all of those are, but I do believe I see some plantains in there. You put them in beef soup? Go figure. I would NEVER have thought of that.
Wondering if the first and last fragments are connected. Will Anthony (what does he think of Tony) get to taste your beef soup. I'll assume those are plantains (not as sweet as bananas) but would have never thought they would go into beef soup.
I've never tried green bananas in cooking... will definitely have to do that...
There are good if the bananas are very firm. You must be very careful when peeling them because the skins turn your hands black as well as staining clothes and towels.
